Cottage Cookies
Ingredients
- 1 cup gluten free flour
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp baking powder
- 1/4 tsp sea salt
- 1/3 cup coconut sugar
- 1 egg
- 1/4 cup olive oil
- 1 tsp pure vanilla extract
- 1/2 cup rolled oats
- 1/2 cup dark chocolate chips (I used Enjoy Life brand)
- 1/2 cup raw pumpkin seeds
- 1/2 cup raw walnuts
Instructions
- Combine all ingredients into a large bowl and mix well until combined.
- Wet your hands and roll batter into 12 equal balls and place on a lined cookie sheet.
- With wet fingers, press the batter down until round and flat.
- Bake at 350 degrees for 10-12 minutes or until cookies are lightly browned. Let cool for 15 minutes before serving.
