Ingredients
  

  • 1/2 cup unrefined coconut oil
  • 1/4 cup raw cacao powder
  • 1/2 cup filtered water
  • 1/2 cup coconut sugar
  • 3/4 cup smooth almond butter
  • 1/2 cup dark chocolate chips
  • 3 cups rolled oats
  • 2.5 tsp pure vanilla extract
  • 1/2 cup chopped salted pistachio nuts (divided)

Instructions
 

  • Combine water, coconut oil, sugar in a saucepan. Bring to a boil while stirring
  • Once boiling, turn off heat and add: almond butter, cocoa powder, vanilla, oats and stir to combine well
  • Once combined, fold in chocolate chips and 1/2 the pistachio nuts
  • One a lined sheet pan, use a large tablespoon to drop spoonfuls of batter onto tray (flatten to your desired thickness)
  • Top the cookies with the remaining chopped pistachios
  • Enjoy!
